It was a 2016 trip to Mexico combined with his experience as head chef at El Grotto and El Publico that led to Chef Tomas Bidois’ love affair with tacos.

Located in the laneway @ 448 beaufort street, Bidois will be bringing LA vibes to Highgate this summer, following a string of successful pop-ups.

Expect a flavourful LA-inspired street food menu full of Mexican and Latin flair, plenty of fresh and frozen cocktails, a variety of wines, Mexican beer and buckets of tequila soda to match the food’s punchy flavours.

Birra tacos (slow-cooked mix of short rib & chuck beef loaded with Mexican chili and spices and served with a cup of consume) and Baja fish tacos (made with a gluten free batter using masa harina) - which are Bidois’ specialty - will be staples on the menu. Slow-roast achiote pork and pineapple taco, and a mushroom and corn taco marinated in an Al Pastor style marinade with achiote paste, cumin seeds, and coriander seeds, braised corn and whipped slow cooked black beans on the tortilla base (vegan, gluten free and dairy free) are also on the menu and will change seasonally.

“Tommy Tacos is a return to cooking simple, tasty food using classic Mexican techniques with a few twists,” says Bidois of the menu. 

“Our menu is quite traditional and you definitely won’t find any unnecessary ingredients on the plate. Whilst there’s a good mix of new things to try, including our generous serve of guacamole and our popular fajita plate, Tommy Tacos main focus is to make really good tacos.”

As part of the pop-up out the back of the Homme building, the venue will also offer a weekly special taco. Think jerk chicken, lamb shawarma and katsu chicken curry, the weekly specials will be Bidois’ opportunity to have a bit of fun with the tacos and feature a few riffs on the tacos they are famous for.

Tommy Tacos will be trading down the laneway at 448 Beaufort Street, Highgate.
